My Top 5 Favorite Pumpkin Recipes This Fall

Pumpkin is one of the best-known sources of beta-carotene! It’s also a great source of fiber, which helps to control blood sugar and helps to keep you regular. My favorite pumpkin recipes are easy to make and don’t require a lot of dishes.

1. Pumpkin bread

2. Pumpkin pasta

I’m all about a one-pot meal. And this one doesn’t even require a separate pot for making the pasta! Using chickpea pasta for this recipe meant I had a great recipe for staying full longer: a healthy dose of fiber (pumpkin), fat (coconut milk), and protein (chickpeas)!

3. Pumpkin Pie Smoothie

You won’t even miss the whipped cream!

1 cup pumpkin
1 scoop vanilla JP Complete
1 tsp pumpkin pie spice
splash of vanilla extract
1 cup of ice
1 frozen banana
2 tbsp almond butter
pinch of salt
1 tbsp hemp seeds
1 tbsp flax seeds

Blend together and enjoy!

5. Pumpkin Spice Bites

Photo credit goes to Lauren Kovacs, of course. Breakfast, dessert, snack, etc. These perfectly sized snacks are so multi-purpose. Plus they freeze great and look fun at parties!

1.5 cups oats
1/2 cup pumpkin
1/3 cup almond butter
1/3 cup agave
2 scoops vanilla JP complete
2.5 tsp pumpkin pie spice

Mix all ingredients together (option to use a food processor for a smoother texture) and form them into balls. Store in the fridge.
